  2. Heat oil in a medium frying pan. Fry bananas in batches, until crispy and golden brown. Drain on paper towels, set aside.
  3. Heat 1/2 tablespoon oil in another frying pan. Fry the chorizo until lightly browned but not crisp. Drain on paper towels.
  4. Top each fried banana chip with a spoonful of chorizo then drizzle cheese.

Preheat oven to 375 degrees F. In a small bowl, whisk together honey, orange juice and cloves. Place ham on a foil-lined baking sheet and roast for 30 minutes. Brush with half the glaze and continue to roast, brushing half through with the remaining glaze, until browned and heated through, about 20 minutes more.

While ham is roasting, prepare chutney. Combine pineapple, cider, onion, cinnamon stick and pepper flakes in a small saucepan. Place over medium heat and cook, stirring frequently, for 10-20 minutes or until pineapple is very tender. Cover pan if liquid begins to evaporate before pineapple softens. Discard cinnamon stick and serve chutney warm with ham.

Turn mixer off and scrape sides of mixing bowl again. Add gelatin mixture.

Add the remaining chocnut batter over the queso layer and refrigerate for at least 4 hours or overnight. Garnish with chocnut and grated queso de bola.

CHOCOLATE SPONGE:

<[if !supportLists]>4.      <[endif]>Carefully fold in dry ingredients. Spread batter on prepared pan. Bake for 15 to 18 minutes or until well risen and center is firm to touch. Be careful not to over bake otherwise it will be very hard to roll.

<[if !supportLists]>5.      <[endif]>Loosen cake from sides of pan and slide it, still stuck to the paper. Transfer to a work surface to cool. Drizzle with rum.

 

COFFEE BUTTERCREAM:

<[if !supportLists]>1.      <[endif]>Whisk egg whites and sugar together in the bowl of an electric mixer. Set the bowl over simmering water and whisk gently until sugar is dissolved and egg whites are lukewarm to touch. Attach the bowl to the mixer and whip with a whisk on medium speed until cooled.

<[if !supportLists]>2.      <[endif]>At low speed, gradually add butter and continue beating until smooth. Dissolve coffee in rum. Beat into butter cream.

 

MUSHROOM MERINGUE:

<[if !supportLists]>1.      <[endif]>In the bowl of the mixer, whip egg whites with calamansi juice and sugar at high speed until stiff peaks form. Do not overwhip. Transfer meringue on a piping bag with 1/2” round tip.

<[if !supportLists]>2.      <[endif]>To make mushroom caps, pipe out mounds, approximately 1” in diameter, on a cookie sheet lined with baking paper. Use about 2/3 of meringue. For mushroom stems. Attach a piping tube with a 1/4” opening in another piping bag. Put remaining meringue inside prepared bag and pipe about 1” lengths.

<[if !supportLists]>3.      <[endif]>Bake at 215°F or until dry, for approximately 2 hours. Let cool and store in an airtight container if you want to store them.

<[if !supportLists]>4.      <[endif]>With the tip of a paring knife, drill a small hole in the back of mushroom caps.

<[if !supportLists]>5.      <[endif]>With a medium mesh strainer, sift cocoa powder lightly over the caps to create large dots of cocoa powder.

<[if !supportLists]>6.      <[endif]>Place melted piping chocolate in a piping bag. One at a time, pipe chocolate into the hole and push meringue stem into chocolate.

 

ASSEMBLY:

<[if !supportLists]>1.      <[endif]>Turn chocolate sponge over in another sheet of baking paper.

<[if !supportLists]>2.      <[endif]>Spread layer with half of butter cream. Roll the cake into a tight cylinder. Transfer to a cookie sheet and refrigerate. Reserve remaining butter cream for outside of the roll.

<[if !supportLists]>3.      <[endif]>Unwrap the cake. Trim ends diagonally starting the cuts 2 inches away from each end.  Position larger cut piece of buche with reserved butter cream, making sure to curve around protruding stump. Streak butter cream with a fork or cake bomb to resemble a bark. Decorate with meringue mushrooms and gum paste Christmas Holly.

SALTED CARAMEL SAUCE:

  1. Cook sugar in a thick-bottomed saucepan over medium heat until sugar starts to caramelize and turns amber in color.
  2. Whisk butter until completely melted. Turn off heat. Add cream and whisk until completely blended. Add salt. Set aside to cool.

APPLE FILLING:

Cook apples with butter, brown sugar and cinnamon over medium high heat until sugar has melted and apples are tender. Add chopped walnuts.

TOPPING:

Beat cream cheese until smooth. Add cream and continue beating light and fluffy.

ASSEMBLY:

  1. Place butter cake slices at the bottom of a deep dish. Transfer cooked apples and let cool completely.
  2. Pour cooled salted caramel sauce over apples then top with cream cheese mixture. Top with more roasted walnuts. Chill before serving.

  1. Combine cream, edam cheese and sugar in a saucepan.  Heat to scalding, remove from heat.
  2. In another saucepan, pour milk and sprinkle gelatin on top. Set aside to soften.  Heat milk to dissolve gelatin, then stir into the cream mixture. Heat to scalding while stirring constantly. Remove from heat.
  3. Strain mixture while pouring into molds or shot glasses. Chill for at least 4 hours to set. Top with Queso de Bola shavings before serving.

QUESO DE BOLA SPREAD:

Mix ingredients well then transfer to a serving bowl. Chill before serving.

 

CHEESE BOARD:

Slice cheese into cubes then arrange on a chopping board. Make some wedges and some cheese sticks as well. Serve with crackers nuts, or dried fruits.

 

Tip:

  • Use crackers of different shapes and size to add presentation appeal.
  • Dried and preserved fruits are great accompaniments to cheeses as well as different types of nuts.
  • It’s best to use the cheese at room temperature for easy slicing.
  • The red wax covering the cheese should never be eaten.

  1. Sift together flour, salt and baking soda and cocoa powder. Set aside.
  2. In a saucepan, melt Butter!licious and add vinegar, water, and vanilla. Mix well and set aside.
  3. Add brown sugar to the flour mixture. Mix well. Gently stir in the liquid ingredients into the dry ingredients. Mix well until smooth. Scoop into lined cupcake molds.
  4. Bake for 18-20 minutes or until almost done then push a piece of marshmallow into the center of each cupcake then continue to bake for another 2 minutes.
  5. Meanwhile, heat cream in a small saucepan until simmering. Pour hot cream into chopped bittersweet chocolate and let stand to allow chocolates to melt. Gently stir chocolate to blend with cream. Stir in melted butter and let cool in chiller until cooled and thick.
  6. Frost cupcakes then sprinkle with crushed graham crackers on top.

  3. Sift flour and powdered milk 3 times. Set aside.
  4. Cream sugar and butter for 5 minutes at medium speed.  Add egg yolks one at a time beating well after each addition.
  5. Add condensed milk.  At low speed, add flour and powdered milk mixture.
  6. Fold in nuts and queso de bola.
  7. Pour mixture into the prepared pan and bake for 35 to 40 minutes or until golden brown in color.
  8. Cool on wire rack.  Cut into bars.

Makes 48 pieces.
