Ingredients

4 (150 g each) pc MONTEREY BEEF SIRLOIN STEAK
1/2 tbsp iodized fine salt
1/2 tbsp pepper
1/2 tbsp paprika
2 tbsp MAGNOLIA NUTRI-OIL
1/4 tbsp MAGNOLIA GOLD BUTTER UNSALTED
HERBED BUTTER:
1 (225 g) pack MAGNOLIA GOLD BUTTER SALTED, softened
1 tbsp chopped parsley
1 tbsp chopped cilantro
1 tbsp thyme
1 tbsp rosemary
1/2 tsp pepper
1 (250 g) pack PUREFOODS BACON CRUMBLE, fried
GARNISH:
150 grams haricovert (French beans) or baguio beans, trimmed then blanched
2 pc cherry tomatoes, sliced in half
2 cups mashed potatoes
fresh thyme or rosemary

Procedure

  1. Mix herbed butter ingredients in a bowl. Transfer to a plastic wrap, roll and make a log. Secure both ends by twisting the cling wrap. Freeze to set.
  2. Heat oil and butter on a pan over high heat. Season beef with salt, pepper and paprika then brown beef about 1/2 minute on each side for medium rare doneness.
  3. Slice 3 inches of the compound butter and place on top of beef while hot. Serve with desired sidings and garnishes.

 

Makes 4 servings.
