One-Eyed Taco Plate
|1/2||cup||MONTEREY GROUND ROUND BEEF|
|1/8||cup||diced green and red bell peppers|
|1||tsp||light soy sauce|
|1||tsp||crushed chilli flakes|
|iodized fine salt to taste|
|pepper to taste|
|1||pack||store bought tortilla chips|
|1/2||cup||seeded diced tomatoes|
|1/2||cup||diced fresh mangoes|
|200||grams||green olives, sliced into rings|
- Pour oil in a pan over medium heat. Sauté onions and garlic for 2 minutes. Adjust to high heat and add ground beef. Sauté for 5 minutes or until beef is cooked.
- Add bell peppers, tomato sauce, light soy sauce and chili flakes. Sauté and simmer for 3 minutes. Season with salt and pepper to taste. Set aside.
- Put tortilla chips on a platter. Add the cooked beef mixture on top of the tortilla chips. Garnish with tomatoes and mangoes on the side forming an eye ball. Serve.
Makes 5 to 6 servings.
