Chowder (not to be confused with the cartoon character) is a seafood soup or vegetable stew usually served with cracker, but as Filipinos we would surely enjoy it more with rice. Try it now!
|1?3||cup||PUREFOODS CLASSIC HONEYCURED BACON, cut into 1/2 inch strips|
|1/2||cup||sliced leeks (1/2" thick)|
|1/2||cup||sliced celery (1/2" thick)|
|1/3||cup||MAGNOLIA ALL PURPOSE FLOUR|
|1||cup||MAGNOLIA PUREFRESH NATURAL COW’S MILK|
|1 (250 ml)||pack||MAGNOLIA ALL PURPOSE CREAM|
|iodized fine salt to taste|
|1/2||kg||white shrimps or baby prawns, peeled & deveined|
|1/2||kg||fish fillet, sliced into 1-1/2" x 1/2" chunks|
|1/2||kg||squid (remove ink sac)|
|1/3||cup||grated MAGNOLIA CHEDDAR CHEESE|
1. In a deep saucepan, fry the bacon to render fat. Leave the fat on the pan.
2. Using the same pan, sauté onions, leeks and celery. Add flour and mix to make a smooth paste. Add fish stock, milk and cream. Season with salt and pepper. Simmer over medium heat, while stirring occasionally until slightly thickened.
3. Add fish fillets, squid, clams and shrimps. Simmer for not more than 7 minutes. Add cooked bacon. Right before serving, sprinkle with cheese.
*To prepare fish stock, boil together in 5 cups water, fish head and bones, shrimp head with celery leaves, leeks, peppercorns and 1/2 cup white wine. Boil until stock has been reduced to approximately 4 cups. Strain.
