Ingredients

7 (28 cups) L water
300 grams MONTEREY PORK LIEMPO
150 grams MONTEREY PORK BONES
300 grams MAGNOLIA CHICKEN BONES
1?2 cup dried seaweed or wakame
1 cup vegetable trimmings
1 tbsp iodized fine salt
3 cups ramen noodles, blanched
1 cup cabbage, blanched and chopped
spring onions for topping
1?4 cup chopped nori

Procedure

1.       In a medium-sized sauce pot with hot water, put first 7 ingredients and bring to a boil for 4 hours over medium-low heat.

2.       After 6 hours, set aside the cooked liempo meat and braising liquid. Discard the rest. Slice liempo and set aside.

3.       In a soup bowl, put 70 grams ramen, 35 grams cabbage, sliced pork, spring onions and chopped nori. Pour in 300 ml of hot broth. Serve hot.

 

Makes 2 to 3 servings.
