Tex-Mex Chicken Salad
Need a break from classic chicken salad? Try this tasty variation with romaine lettuce, tortilla and salsa.
|3||pc||MAGNOLIA CHICKEN STATION BREAST FILLETS|
|iodized fine salt and pepper to taste|
|2||pc||flour tortillas, toasted and cut into wedges|
|4||cups||Romaine lettuce, cut into bite-size pieces|
|4||pc||green tomatoes, cut into bite-size pieces|
1. Season chicken breasts with salt and pepper.
2. Cook on the grill or pan grill until fully cooked but not dry. Cut into cubes. Set aside.
3. Toss salsa, flour tortilla, lettuce and green tomatoes together. Top with grilled chicken cubes.
Makes 4-5 servings.
